Oklahoma Black Walnut Cake

1/2 cup butter                         1/4 tsp walnut flavoring                                                                   

2 cups sugar                           1 tsp soda

1/2 buttermilk                                      1 cup boiling water

2 cups flour                                        4 Tbs. cocoa

3 eggs (well beaten)

1 cup black walnuts

Mix first seven ingredients together; then mix the soda, cocoa and the boiling water together and add to the mixture. Mix well. Pour in layer pans that have been greased and floured  and lined with waxed paper. Bake in a moderate oven 30 to 35 minutes. Use your favorite white or chocolate icing.

Kansas Sour Cream Cake

2 cups sour cream                             1 tsp vanilla

3 eggs                                                                4 cups sifted flour

      1 1/2 cups sugar                                4 tsp baking powder

      1 cup milk                                         1/2 tsp soda

Sift dry ingredients, beat eggs well, add sour cream and sugar, add dry ingredients to milk alternately. Do not mix too stiff. Bake at 350 degrees.
